Ability to set progress on a task
Some tasks are large and I can't finish them in one day. I'd like to be able to set how far I've come on a specific task on a specific date (instead of saying it's done saying it's x% done).

I've seen a few different implementations of this. If Bullet were to recognize checklists you could display a percentage of completed items. This could also be done using subtasks, but would then become a premium feature. Alternatively you could display a progress bar that you can manually drag to wherever you want.
In my paper BuJo I use a / (forward-slash) mark to indicate an item I worked on, but didn't complete yet. When I migrate to the next day, I keep an eye out for those ongoing projects. That way I don't have to think about percentage of progress, just the fact that I touched a project that day is important. When the project is finally done, that slash turns to an X.
